Ever feel the need to have some dessert or just a yummy snack yet at the same time you want to stay away from foods that are loaded with unhealthy chemicals? Try out my awesome banana nut bread recipe! It’s loaded with fiber and all natural ingredients that it can actually benefit you as a dessert or healthy snack unlike many of the other sinful treats out there!
What You’ll Need:
4 Ripe Bananas (The riper the sweeter)
2 Cups Whole Grain Flour
2-3 tbs Wheat Germ
3/4 Cup Coconut Sugar
2 Eggs
1/2 tsp Sea Salt
1 tsp Baking Soda
1/4 Cup Coconut Oil
1 tbsp Cinnamon
1/4 Cup Applesauce (I use the little single serve cups so I’m not opening a big jar that might wind up sitting opened in the fridge too long.)
1 or 2 cups of Walnuts depending on how ‘nutty’ you like your bread (If you don’t like nuts, it’s great without a well)
First, preheat your oven to 350′. Use 2 separate bowls and combine your flour, salt, baking soda and wheat germ in one. In the other bowl mash up your bananas, add the coconut sugar, eggs, applesauce and coconut oil. You might have to melt the coconut oil over low heat for a moment if it’s in its solid state. Stir all the ingredients together with a fork then add them to the bowl with the flour. Simply stir with a fork until all of it is blended well. Add the walnuts, setting aside a handful or so to sprinkle over the top once you pour the mixture into a pan.
I’ve used 2 glass pans, a 4×9 and an 8×8. I have also used a bunt cake pan which worked wonderfully! Non-stick pans or not, I’ll rub a very tiny bit of coconut oil along the bottom and sides and then coat it with a little of the flour. Helps out a lot! Once you pour your mixture into your prepared pans sprinkle extra walnuts on top and I always sprinkle a bit of coconut sugar over the top as well ( 1tsp-1tbsp) That with the walnuts on the top adds the perfect amount of crunchy sweetness.
Bake at 350′ for about 25-30 minutes. If using the bunt cake pan it could take up to 45 or 50 minutes. Everyone’s oven can cook a little different…350′ or not, so it’s best to keep an eye on it and once the cake tester or toothpick comes out clean, you’re good to go!
